Prime Rib Cooking Instructions
Remove your prime rib from the refrigerator 1 least 1 hrs before roasting.
Pre-heat your oven to 450

Place your prime rib in the oven uncovered in the pre-heated oven.
One note of caution; you can always cook the roast longer
but you can never cook it less!!
2-bone rib– roast at 450
for 15 minutes. Lower the oven temperature to 300

without opening the door, and continue roasting 45 minutes:
check the internal temperature with a meat thermometer
3-bone rib—roast at 450
for 15 minutes. Lower the oven temperature to 300
°

without opening the door, and continue roasting 1 hr 15 minutes:
check the internal temperature with a meat thermometer
4-bone rib—roast at 450
for 15 minutes. Lower the oven temperature to 300
°

without opening the door, and continue roasting 1 hr 30 minutes
check the internal temperature with a meat thermometer
5-bone rib—roast at 450
for 15 minutes. Lower the oven temperature to 300
°

without opening the door, and continue roasting 2 hrs.
check the internal temperature with a meat thermometer.
FOR ALL SIZE PRIME RIBS:
Rare: remove the roast at 115
-120
°

Medium: remove at internal temp of 120
-125
°
°
Well done: remove at internal temperature of 145
-150
°

allow to rest at least 15-20 minutes before carving
Every half hour or so, baste the ends of the roast with the drippings. Use your meat
thermometer about a half hour before the expected end of the roasting time. Make sure
to insert it in the thickest part of the meat, not touching the fat or bone. When the inter-
nal temperature reaches 115°, pull it out of the oven and cover with foil. Let the roast sit
for twenty to thirty minutes. It will continue to cook during this time, reaching a tem-
perature of about 120° to 125°. This resting period allows the juices and flavors to
permeate the roast.
