MEASUREMENT OF VOLUME
In the measurement of volume, there are two measurement systems that are commonly used.
Metric System
In most of the world, the litre is used for the basic metric unit for volume. Various prefixes are added
to litre giving the quantity of the base. In the hospitality industry, we usually work with litres (L) and
millilitres (ml).

Imperial System
The imperial system doesn’t use prefixes but uses names to denote different measurements. The fluid
ounce is the base imperial unit for volume.

Often it is necessary to convert between imperial and metric measurements and we need to multiply
or divide one measure by the other, depending on what we want.
EXAMPLE 8.1A
Convert 3.5 gal to fluid ounces (fl oz).
SOLUTION
3.5 gal = (3.5 × 160) fl oz
[Since 1 gal = 160 fl oz]
= 560 fl oz
