Note: Under certain conditions, enzymes are denatured. An enzyme is denatured when the protein molecule
loses its proper shape (disrupts the active site in the process) and cannot function. Some factors that can
denature an enzyme are high temperatures, extremes of pH, heavy metals, and alcohol.
1. Which conditions denatured the enzyme? How do you know? Use data to support your answer.
2. Can frozen liver be reused? Cooked liver? Explain using evidence from Mrs. Thennis.
